Chorizo mussels

Spice up your love of shellfish with this spicy chorizo & mussels recipe. Inspired by the way the Spanish love to eat mussels, this recipe is perfect for those who aren’t afraid of flavor!
Ingredients
- 4 oz Chorizo raw (uncased)
- 1 Lbs Mussels
- 1 Tbsp chopped shallots
- 1 tsp chopped garlic
- 1 Tbsp Cajun seasoning
- ½ cup White wine
- 4 Tbsp butter
Instructions
- Heat 1 ounce of clarified butter in a pan
- Add Chorizo sausage and start rendering the fat
- Add shallots, garlic and sauté
- Add mussels to pan and toss around
- Add wine, butter, and Cajun seasoning, reduce into a sauce
- Make sure all the mussels have opened before serving
- Garnish with parsley, lemon and grilled bread
