Fanny Bay Oysters

Breaded Oysters - Seafood Shop Style

Fanny Bay's Seafood Shop has been a staple along the central east coast of Vancouver Island for over 20years! Our team is some of the most knowledgable seafood mongers in British Columbia. And boy do people love their recipe for breaded oysters!

Ingredients:

16oz container of shucked Fanny Bay Oysters (approx: 9pc oysters)

3/4 cup all purpose flour

1 egg

2 tbsp lemon juice 

2 cups crushed Breton's cracker crumbs 

1/4 cup butter 

1/4 cup preferred cooking oil 

Method: 

-In a pot on the stove, cover the oysters with water and gently bring to a boil for 3-5mins. Then drain the water and cool the oyster meat.

-Whisk together the lemon juice and egg in a bowl and set aside. In a second bowl put the flour, and in a 3rd bowl the crushed cracker crumbs 

-Dredge the cooked oysters in the flour, shaking off any excess. Then dip into the egg mixture, followed by rolling them in the cracker crumbs.

-In a large non-stick pan melt the butter over medium heat, then add the cooking oil. Place the coasted oysters in the pan and cook until brown, then flip them over and repeat. 

-Serve hot with lemon and your favourite tartare sauce.
