Baked oysters on a tray

Love oysters baked in their own juices? One of the best ways to eat an oyster is baked. Impress your friends and family with this oyster favourite. Quick and easy this recipe can be made with or without bacon, depending on your preference.

Compound butter Ingredients:

  • 1 stick room temp unsalted butter
  • 4 Tbsp minced shallot
  • 4 Tbsp chopped roasted red pepper
  • 4 Tbsp minced garlic
  • 4 tsp chopped parsley
  • 1 tsp salt
  • 4 tsp lemon juice
  • 4 shakes of tabasco
  • 2 Dozen oysters on the half shell
  • Bacon (optional)

Instructions:

  • Start mixing all the ingredients together in a bowl
  • Whisk together until completely incorporated
  • Shuck as many oysters as you would like to serve – this recipe should be enough for 2 dozen medium oysters
  • Leave the oyster in the cup part of the shell
  • Put a small dollop of the butter mixture onto each oysters
  • Top each oyster with ½ a slice of bacon (optional)
  • Line a pan with rock salt for stabilizing the oyster
  • Place oysters on the salt and put in the oven @ 400˚C for 13 minutes
  • If bacon is not as crispy as you like turn on broil to reach desired doneness
